O blog faz hoje dois anos. Tem sido uma boa forma de organizar as receitas que vou fazendo e, melhor ainda, de partilhá-las com toda a gente. São já 135 receitas diferentes, de vários géneros, que me têm feito cozinhar mais e, espero, melhor. A título de curiosidade, a receita mais popular parece ser a do Pudim Molotof - provavelmente vocês são tão gulosos quanto eu!

A receita de hoje não tem nada a ver com Molotofs, no entanto. São Melanzane Alla Parmigiana, ou beringelas à parmesã, uma receita tipicamente italiana, do sul, e cuja receita me foi passada já há uns anos por uma amiga italiana. Aliás, já a tinha publicado no antepassado deste blog, o Cozinha Com Tomates, e continuo a fazê-la da mesma maneira: fritam-se rodelas de beringela e levam-se ao forno intercaladas com molho de tomate e queijos mozzarella e parmesão (daí o nome). E se dito assim parece simples, é porque é mesmo. No entanto, como em tantos outros bons pratos tradicionais, simples não significa pouco saboroso, antes pelo contrário. As beringelas são fritas em azeite, absorvendo-no e ganhando o seu sabor. O molho de tomate e os queijos complementam-no e fazem com que o resultado final seja uma explosão de sabores tipicamente mediterrâneos e genuinamente italianos. Não é uma receita leve, longe disso, mas é uma maravilha em qualquer mesa.

No fundo, uma escolha ideal para um dia de aniversário. Parabéns ao blog - e muito obrigado a todos vocês por o seguirem!




Melanzane alla parmigiana

Ingredientes ( 4 pessoas )
  • 4 beringelas
  • sal
  • azeite
  • farinha
  • 2 ovos
  • 1 cebola pequena, cortada em quartos ou oitavos
  • 2 dentes de alho
  • 500g de polpa de tomate
  • manjericão, algumas folhas
  • 1 colher de chá de açúcar
  • 2 queijos mozzarella
  • queijo parmesão

  • Lavem bem as beringelas e cortem-nas em rodelas com cerca de 0,5cm de espessura. Coloquem as rodelas dentro de um passador grande, em camadas, colocando sal abundante sobre cada camada. No fim, coloquem uma taça pesada por cima, para fazer pressão. Deixem repousar por meia hora, pelo menos - o sal irá fazer com que as beringelas larguem o líquido amargo que contêm e irá melhorar o seu sabor.

  • Assim que estiverem prontas, lavem bem as rodelas de beringela, retirando o sal, e reservem-nas. Liguem o forno a 190º e, enquanto aquece, deitem um fio generoso de azeite numa frigideira grande e funda. Coloquem um pouco de farinha numa tigela e os dois ovos noutra, batendo-os ligeiramente com um garfo. Assim que o azeite estiver quente, passem cada rodela de beringela pela farinha e pelo ovo batido e fritem-na no azeite, de ambos os lados, até a polme estar bem dourada. Coloquem as fatias num prato, sobre papel de cozinha para absorver o excesso de azeite. Reservem.

  • Para preparar o molho de tomate, coloquem numa panela um fio de azeite, a cebola e os dentes de alho. Deixem alourar. Juntem a polpa de tomate, o manjericão e o açúcar (para cortar a acidez do tomate). Deixem levantar fervura e cozinhar durante uns minutos, mexendo de vez em quando. Assim que estiver pronto, triturem bem com uma varinha mágica.

  • Deitem um pouco do molho de tomate no fundo de uma assadeira de forno funda e cubram com uma camada de rodelas de beringela. Sobre estas, espalhem pedaços de mozzarella e uma quantidade bem generosa de parmesão ralado. Repitam as mesmas camadas - molho de tomate, rodelas de beringela, mozzarella e parmesão - até acabar os ingredientes.

  • Levem ao forno por meia hora até o topo estar dourado e borbulhante. Retirem e deliciem-se!

Today is our second anniversary. This blog has been a great way for me to organise the recipes I try out and, better yet, to share them with everyone. There are already 135 different recipes, across different types of cooking. They have certainly made me cook more and, I hope, better. Just out of curiosity, the most popular recipe so far seems to be the Molotof Pudding - you probably have as sweet a tooth as I!

Today’s recipe has nothing to do with Molotofs, though. It’s a recipe for Melanzane Alla Parmigiana, or Parmesan aubergines, a typical recipe from southern Italy which was passed to me a few years ago by an Italian friend. In fact, I had published it before on this blog’s ancestor, Cozinha Com Tomates, and I still make it in the same way: you fry some aubergine slices and then bake them in the oven with tomato sauce, mozzarella and parmesan (hence the name). And if it sounds easy, that’s because it is. However, as in so many other good traditional dishes, simple does not mean less flavourful. On the contrary - the aubergines are fried in olive oil, absorbing it and gaining its flavour. The tomato sauce and the cheeses add to it and turn the final result into an explosion of typically mediterranean and truly Italian flavours. It’s not a light recipe, far from it, but it’s a gorgeous dish at any table.

To me, it’s a perfect choice for an anniversary. Congratulations to the blog - and many thanks to you all for following it!




Melanzane alla parmigiana

Ingredients ( 4 people )
  • 4 aubergines
  • salt
  • olive oil
  • flour
  • 2 eggs
  • 1 small onion, cut in quarters or eights
  • 2 garlic cloves
  • 500g chopped tomatoes
  • basil, a few leaves
  • 1 tsp sugar
  • 2 mozzarella cheeses
  • parmesan

  • Wash well the aubergines and cut them in slices, about 0,5cm in width. Place the slices inside a large sieve, in layers, adding plenty of salt over each layer. At the end, place a heavy bowl on top, to make some pressure. Leave for at least half an hour - the salt will make the aubergines lose the bitter liquid they have inside and will improve their flavour.

  • As soon as they are ready, wash well the slices, removing all the salt, and remove them. Turn the oven on to 190º and, while it heats up, add a generous amount of olive oil to a large deep frying pan. Place some flour in a small bowl and the 2 eggs in another, beating them lightly with a fork. As soon as the oil is hot, dip each aubergine slice in the flour and then in the beaten egg and fry it in the olive oil, on both sides, until the batter is nice and golden. Place the slices in a plate, over kitchen paper to absorb the excess oil. Reserve.

  • To prepare the tomato sauce, add a drizzle of olive oil to a saucepan, then add the onion and the garlic. Cook until they gain colour. Add the tomatoes, the basil and the sugar (to cut the tomato acidity). Wait til it simmers and leave for a few minutes, stirring occasionally. As soon as it’s ready, blend well using a hand blender.

  • Add a bit of the tomato sauce to the bottom of a deep roasting tin and cover with a layer of aubergine slices. Add pieces of mozzarella and a generous amount of grated parmesan over them. Repeat the same layers - tomato sauce, aubergine slices, mozzarella and parmesan - until you run out of ingredients.

  • Bake in the oven for half an hour until it’s beautifully golden and bubbly on top. Remove and enjoy!
